-I´ll show you ingredients from traditional Basque gastronomy and we will locate them geographically in the territory of the seven Basque provinces, so you can tour the Basque Country through its gastronomic culture.

-We will cook and taste 6 of the most famous Pintxos of San Sebastián´s bars, while I tell you their stories, secrets and tips so you can cook like a local chef. They will be 6 bite "Basque tapas" that will include local ingredients as fish, pork, cheese, eggs, dairy products and vegetables. Dessert will include the original recipe of "the best Cheesecake in the World", from "La Viña" bar. It is possible to adapt the 6 pintxos for vegetarians, but because most of the ingredients in our culture are of animal origin, it is not a course suitable for vegans. Sorry.

-We will set up a little stand with different props for you to take beautiful photographs of the Pintxos you've prepared, so you can share your experience and new knowledge with family and friends.

The class I offer is dynamic. You, traveller, will cook your own Pintxos with my help. The most important thing is to arrive hungry for cooking, learning, enjoying and getting your hands dirty!!

Hello! I´m Lander Ganzo; born, raised and living San Sebastián´s cooking through my grandma´s kitchen. This love for food, my studies in Basque cooking and amazing experiences on the road made me a chef.

I want to share with you my passion, enjoy cooking together, exploring new ingredients, techniques and traditional Basque cuisine. I´ve cooked in the best local Michelin starred restaurants as Arzak, Alameda. I´ve also given classes at cooking schools as Basque Culinary Center, Aiala or in TV for Masterchef. Now at my own Ama Ur Cooking Studio.

On my trips around the world I've also taught Basque cooking in Japan, Perú, India, G.B.

What a great experience for our family to have a pintxos class with Lander. The pintxos are excellent and easy to make at home - and we surely will. Lander is very kind and good at teaching. He gave an excellent introduction local basque specialities as well as many good recommendations for places to eat while in town. He is also very knowledgeable about many other kitchens - particularly the Japanese - so if you like to talk food besides making pintxos, Lander is the guy!

The cooking class with Lander was exceptional. He told us so much about specialties from his region and the background of great Pintxos. We cooked amazing Pintxos and learned new techniques. This was hands down the best experience I've had in San Sebastian, and one of the best on either of my two trips to Spain. I first passed through the city while walking the Camino de Santiago in 2017, and was entranced with the food and culture of Basque Country, though couldn't fully enjoy it because I was sick and on a time crunch to reach Santiago de Compostela. When I brought my wife over for her birthday 3 years later, the first thing I wanted to share with her was the food in San Sebastian, but wanted a way of explaining it and learning about it that went beyond stuffing pintxos in our mouths. What Lander offered during this cooking class was all I could've hoped for and more. We met a few blocks from his home and he walked us to his small studio where he had expertly and tidily arranged everything for class. We started with an overview of the map of Pais Vasco, looking at it from the perspective of where the ingredients we were going to use had originated. As someone who is obsessed with maps, this gave me an immediate understanding and appreciation for the ingredients and the culture of local basque cuisine, which is so special precisely because of those special ingredients. We learned several recipes, from tortilla de patata (mind-blowing technique, so inspired now), to Gildas (which was a perfect introduction to the history of the pintxo), to cleaning and preparing marinated anchovy (I've been scouring the Bay Area for fresh anchovy since returning home), to a chistora and puff pastry "pig in a blanket" (which I could've eaten an entire meal of separately), to the decadent and delightful Basque Cheesecake from La Viña (which is officially the first cheesecake I can say that I unequivocally loved). Every item was prepared with delicacy and love, and you could sense the passion and focus that went into Lander's craft. We were brought into each recipe as a sous chef, guided in how to properly prep, cut, and arrange each dish all while sharing stories of his and our travels around the world. We left his home after an amazing four hours that reignited my love for this amazing region, and lit a fire for both of us to dive in and devour as many pintxos as we could over the next two days. We left San Sebastian full, in both heart and belly, and will return again to savor all this beautiful city has to offer, thanks in large part to Lander and his wonderful course.

We had a fantastic time learning about Basque cuisine with Lander! He is highly trained, knowledgable and passionate about his home and the art of cooking. He makes you feel very welcome and at home, whilst entertaining you with facts and stories about the food and Basque culture. We learnt how to make the perfect tortilla, Basque cheesecake and many pintxos, which we will definitely be trying at home! A great experience, and highly recommended! :)

I would say this class was the best moment of my whole journey on Spain. I could learn A to Z of San sebastian’s pinxo. History, typical ingredients and famous pintxo recipes of the city. Above all the host, Lander was very considerate person so I felt comfortable and warm during the class. I highly recommend this experience. Never forgettable.
