We begin with quick run through of the history and theory behind macarons, from there we begin making the shells from scratch. As the shells bake we make the ganache fillings (vanilla, chocolate, and pistachio). By the time the filling is complete, the shells have baked and cooled and we begin piping the macarons. Every student walks out with 25 macarons total.
My wife Nathalie and I started as engineers, I focused on computer, and Nathalie on civil. However I had a passion for baking. With the help of my business savvy wife, Mille-feuille first opened in Greenwich Village back in 2011, where I made all products in store. After 3 years and a dedicated customer base that appreciated the authentic quality of my viennoises and patisseries, we opened second location on the Upper West Side and I got to move to a larger kitchen in Brooklyn to oversee daily production for both stores. We now use the Village location to hold all our classes.

We hold our classes in our first and original store in Greenwich Village. We section off the back portion of the shop and use our large counter top, allowing customers in store to momentarily watch but not interfere or distract from the process.
